Yes, summer days are here … sort of. All of the rain and cold this week in London have made me want the comforts of soup! Today, I was working hard at my second job. At lunch time, I felt so hungry but had such little motivation to cook. I have cauliflower in my veg box this week and decided an easy soup is in order! This soup doesn’t take too much time and effort for a lot of reward!
1 head of cauliflower
2 smallish potatoes, peeled
1 stalk of celery plus a handful of celery leaves and small tender stalks from the middle of the bunch
salt and pepper to taste
1) Heat olive oil in a sauce pan over medium heat while washing and chopping the leek, celery, potato, and cauliflower. Add as you chop, stirring around occasionally until the cauliflower is slightly browned or for about 5 minutes. Roasting the cauliflower would probably be nice, but I just couldn’t be bothered! I think making it another time I will try that!
2) As this is ‘lazy’ soup, I didn’t bother mixing up the stock and water. Sprinkle in a bit of stock powder and pour just boiled water over the cooking veg until they are completely covered. Give it a few stirs and cook for about 15 min, or until the potatoes and cauliflower are cooked through.
3) Take the soup off the heat and use an immersion blender to blend it up until smooth (or until its a consistency you like!). Add salt and pepper to taste. Cook the blended soup for a few more minutes to bring it together and then enjoy! I garnished mine with a bit of basil and white truffle oil (an anniversary purchase!).
